ALOO TOKRI CHAATS

Hey foodies,

Today I am gonna bring you a recipe from chats and that too unique n cute.

Since my college days, i was wondering how they make such tasty chaats and especially those aloo baskets. But never asked them or searched for it.

Recently I came across the same chaat and I Googled it and here I bring you a tasty chaat recipe - Aloo katori / tokri chaat.



Potato Basket.
Ingredients:
Potato / Aloo - 1 big peeled
Mixed sprouts - 1/4th cup
Tomato - 1/2 cup diced
Onions - 1/4th cup
Chaat masala - as needed
Dahi - 1/4 cup
Green chutney - as needed
salt - as taste
Coriander leave - 1 tbsp
Oil for deep frying


Instructions:

Wash the potatoes and peel off their skin.
Once done, grate the potatoes thickly with big grater that has large holes.



Keep the grated potatoes soaked in cold water for 5 minutes.


After 5 mins, drain the water from the grated potatoes completely and dry the potato straws using a kitchen towel.




Now take a tea strainer and place a portion of the grated potato evenly covering the base and sides of the strainer completely.



Now take a second tea strainer which will be a size smaller or of same size and place it on top of the grated potatoes inside the first tea strainer.



Heat oil in a deep bottom pan / kadai and holding both the strainer firmly lower it into the pan, completely immersing it into the oil.
On medium heat deep fry till the potato basket turns golden brown.


Remove the tea strainers from the oil and gently place them on an tissue paper.
Remove the top strainer and keep it aside.
Invert the strainer with basket from the tea strainer.



Repeat the same with all the remaining baskets.

Now lets make the filling:

In a bowl, take sprouts, add chopped onions, tomatoes, salt and chaat masala and mix it well.



Dressing the baskets:
Place each basket in a plate, and put spoonful of filling we made, top it with dahi, green chutney and yellow sev on it.







Garnish with anar / pomegrate / coriander sprigs.
Tasty tokri aloo chaat is ready.!!



Note:
1. Use old potatoes as this variety of potatoes has more starch and result in crispier baskets.
2. Use of towel will be helpful as the strainer handle will be too hot.
3. You can make any filling of yur choice.
4. You can make tokri with less oil in oven using cup cake moulds too.
