VEGETABLE BIRYANI

Hey foodies.. Who don't love biryani.. We all love it and if loaded with yummy veggies..which is must for kid... Tastes yummm when served hot with raitas.



Ingredients

Onion - 1
Mixed vegetables* - As needed
Sambar powder/red chilli powder - 1/2 tsp
Salt - As needed
Coriander leaves - 2 stems
Ghee - 1 tblsp
Basmati Rice - 1 cup
Mint leaves - 10
Green chillies - 4
Garlic (big variety) - 4
Fennel seeds - 3/4 tsp
Cardamom - 1
cloves - 1
Star anise - 1/2
Oil - 3 tblsp
Jeera - 1 tsp
Bay leaves - 1
*I used 1 carrot,1/2 potato, 8 beans,1 fist full of frozen peas, 2 baby corns,10 florets of cauliflower.




Instructions

Soak basmati rice for at least 1/2 an hour.

Grind mint leaves, green chillies, fennel seeds, star anise, cloves, elaichi and garlic with Lil water to a smooth paste.




Chop the veggies to your desired size.

Slice the onion.


Heat a cooker with oil/ghee and add Bay leaves, onion, jeera and curry leaves.








Fry till onions are just transparent.

Now add the ground masala.



 Add sambar powder and fry in medium flame for 2 minutes.



Add the veggies except cauliflower.




Fry for 2 minutes and add the soaked rice draining water. Give it a stir.





Add 1 and 1/2 cups water, salt and mix well.


Check for salt and bring to boil.



Now add the cauliflower and top it with ghee n mix well and cover with the lid.



Pressure cook with whistle till 2 whistles in medium flame.







Top with ghee and coriander leaves and serve hot with onion raita.!!!


Notes

1. Can reduces garam masala as per your spiciness.

2. Can add chopped tomatoes also.

3. Coconut milk can be used for extra flavour instead of water.

4. Add veggies are desired.

5. Adding ghee make the biryani taste heavenly.

6. You can add fried paneer cubes, bread pieces on top of it.
