Vermicilli Upma - Semiya Upma

Hey foodies,

This is one of my favorite and easiest recipe to make.I love it more when my dad makes me this,, it take very less time too. It can be made for Breakfast or dinner and the coolest thing is that the Dish can be added with any vegetables of your choice and make it very healthy.

Ingredients:

Vermicelli-2 cup (roast it in a pan with a little oil)
Onion-1 finely chopped
sweet corn - 1/2 cup
potato - 1 chopped
Tomato - 1 diced
Carrot-1 chopped
Beans-5 chopped
Frozen peas-1/2 cup
Green chilli-2 chopped finely
Turmeric powder-1 tsp
Chilli powder-1 tsp - add more if need more spicy
Salt - to taste
Ghee-1 tblspn
Coriander leaves for garnishing.. i am out of it
Seasoning:
Oi l- 2 tblspn
Mustard seeds-1 tsp
Cumin seeds (JEERA) - 1 tsp
Asafoetida (HING) - 1 tsp
Curry leaves- 6-7
Ginger - 1 tsp finely chopped - optional
Garlic -1 tsp finely chopped - optional





Method:

Heat 3 cups of water in a pan to rolling boil.


In a kadai add oil and heat it up,



Add all the seasoning ingredient in the given order,let them sizzle for 1 min.



Add onion and green chilli and fry it till brown, Now add in the turmeric and chilli powder.
Add all the veggies and fry it for 2 mins, then add chopped tomatoes to it and cook covered with lil water until half cooked.





Now add the roasted vermicelli and pour the boiling water.
 




Keep the heat to simmer and let it cook covered till the water is absorbed.


Add in the chopped coriander and drizzle the ghee on top and turn off the heat and let it stand for 10 min covered.





Yummy semiya is ready to gulp.

Note:

You can heat more than 3 cups of water ,so that if you need more water for the vermicelli 

You can add that boiling water, also note to not add cold water to it.
